Five dinner formulas that use up anything

Learn these, and almost anything in your fridge can become dinner.

The stir-fry

1 lb protein + 4 cups vegetables + sauce + rice or noodles

Then try: High heat, protein first then out, vegetables, aromatics, protein back, sauce. Sauce: 1/4 cup soy, 1 tbsp honey, 1 tbsp vinegar, 1 tsp cornstarch, 1/2 cup water.

The sheet-pan dinner

1–1.5 lb protein + 2 lb vegetables + oil + seasoning

Then try: 425°F. Hard vegetables (potatoes, carrots) go in first for 15 minutes; quick ones (peppers, broccoli, green beans) go in with the protein.

The soup

Onion + 2 other vegetables + 6 cups broth + beans or pasta or grains

Then try: Soften the vegetables, add broth and simmer, add beans and pasta, finish with greens, salt and a squeeze of lemon.

The pasta

12 oz pasta + a vegetable + a protein or beans + cheese + pasta water

Then try: Cook pasta, saving a cup of water. Sauté the extras with garlic, toss everything with cheese and splashes of pasta water.

The bowl

Rice or grains + a protein + 2 vegetables + a sauce + a crunchy topping

Then try: Cook the grain, warm or roast the rest, pile it up, drizzle. Toppings: green onions, seeds, peanuts, a fried egg.

The rescue rule

Check the pantry before you shop: pasta, rice, beans, eggs and canned tomatoes make at least ten dinners.

Then try: trying the "What can I cook tonight?" finder on this page.

The book has full recipes for 20 dinners, built on these formulas, with swaps for every one.

Most take 20 to 40 minutes, with 10 to 25 minutes of hands-on work. Every recipe shows the total and hands-on time.

How many people do the recipes serve?
